Oliver Bauer, a winemaker trained in Württemberg, came to Romania for a project and stayed for a wine region: since 2012 he and his wife Raluca have been making wine in Drăgășani, in Oltenia. Production runs are small and intervention minimal, with the spotlight on local varieties few still worked: Crâmpoșie Selecționată, Negru de Drăgășani, Novac. Bauer wines have become a reference for modern Drăgășani — fresh, elegant, with a clear sense of place. This is one of our exceptions to the "close to home" rule: the wine comes from Oltenia. But its story — a German who bet on forgotten Romanian grapes — is worth the journey. You'll find it on the menu and in our shop.
