For years a very popular wine guide has called Merlot "the workhorse of Romanian red varieties" — meaning that it most often produces large quantities of unremarkable wine. But that's only one side of the coin: Romanian Merlot can offer far more when its own expression and distinct character are brought out. With selected plots and proper winemaking, Merlot yields distinguished, complex wines with excellent ageing potential. Following our "natural creativity" philosophy, with Bauer Merlot we want to make another statement about the impressive diversity this variety can offer. Thanks to its strong, very expressive character, Bauer Merlot pairs with heartier food — beef, game and similar dishes. We also encourage you to try it with chocolate- and/or coffee-based desserts. To obtain perfectly ripe fruit, the grapes are always hand-picked and selected berry by berry. After destemming the grapes are not crushed and no selected yeasts are added. Alcoholic fermentation takes place in small stainless-steel tanks without temperature control, with manual punch-downs up to three times a day. The wine stays up to 5 weeks on the skins before pressing and transfer to large oak barrels, where malolactic fermentation occurs and the wine ages for at least 14 months before bottling.
