
Vintage 2019. Dry white wine, 13.0% vol. alcohol, 2.4 g/l sugar. Variety: Sauvignonasse. Limited edition of 4,000 bottles. S.V.S. is the oak-barrel-aged version of the winery's Sauvignonasse. The wine is made from carefully selected grapes from an old vineyard (over 40 years), with very low yields (under 5 t/ha). After pressing, the wine ferments in oak barrels (300 L) with no added selected yeasts and is aged in these barrels for 14 months. During this time periodic bâtonnage (stirring of the lees at the bottom of the barrel) is carried out to round out the wine and increase its expressiveness. Compared with the regular Crama Bauer Sauvignonasse, S.V.S. is fuller and creamier, with a less mineral character but added notes of earth and spice. In its first 2–3 years it needs aeration to open up fully. It pairs very well with seafood, veal or poultry prepared with white sauces.
